Ingredients
4 servings
For the Beef
1 lbflank steak
or strip, thinly sliced
1juice of lime
1 tspgarlic powder
1 tsppaprika
1 tspcumin
¼ tspsalt
For the Salad
6 cupsromaine lettuce
chopped
2 cupsbaby spinach
or substitute with baby kale, arugula or mixed greens
1 cupcherry tomatoes
quartered
3green onions
chopped
2bell peppers
choose 2 vibrant red, yellow or orange
1onion
sliced
½ cupsour cream
½ cupsalsa
For the Tortilla Chips
Instructions
Step 1
Marinate strips of beef in the lime and seasoning while you prepare the rest of the ingredients
Step 2
Preheat oven to 350F
Step 3
Toss tortilla strips with oil, taco seasoning and a sprinkle of salt. Arrange on a sheet pan and toast in the oven for 10-15 minutes until light and crispy. Stir the chips half way through for even baking
Step 4
Heat 1 tbls of oil in a skillet. Saute onions for 3-4 minutes. Add beef and marinate. Cook until tender and cooked through -a about 7 minutes
Step 5
Toss lettuce, greens, tomatoes, peppers and green onions. Arrange on a large platter or individual bowls.
Step 6
Top with cooked beef and onions, a spoonful of sour cream and a spoonful of salsa
