Step 1
1. Cut potato into small cubes and boil until soft (not completely cooked)
2. Dice onion and cut carrot into chunks
3. In a large frying pan, fry 2 TBSP butter and onion until tender.
4. Add garlic, ginger, garam masala, chilli powder, cayenne pepper and cumin and fry until fragrant
5. Add tomato, carrot and ‘chicken’ (if using real chicken, brown in an extra 2 TBSP of butter and remove from pan before cooking onion)
6. Bring to a simmer for 5 minutes before adding cream, water and potato
7. Bring back to a simmer and let simmer for 10-15 minutes and add the remaining butter and let melt
8. Season with salt and pepper
9. Serve alone or with rice or naan bread
