¼ teaspoonground cinnamon
ground nutmeg

⅛ cupgluten free flour
½ tablespooncornstarch
1 cuprhubarb
1/2 inch pieces
Muffin batter
Instructions
Step 1
Pre-heat oven to 350
Step 2
Add 1/2 T. granulated sugar, 1/2 T. brown sugar, 1/2 T. cornstarch, 1/2 T. GF flour to rhubarb, stir to combine
Step 3
Make streusel- combine remaining sugar, butter, cinnamon, GF flour, nutmeg, and salt
Step 4
Add about 1/3 of the streusel to the rhubarb mixture, stir
Step 5
Make muffin batter by combining all remaining ingredients
Step 6
Add rhubarb to batter, stir to incorporate
Step 7
Add muffins to a buttered muffin tin and top with remaining streusel
Step 8
Bake until golden brown, 18-20 minutes
