Instructions
Step 1
1 hour ahead, make vegetarian dashi. Bring 3-5 shiitake and 10g of kombu and 5 cups of water to boil (covered), turn off the heat on stove and wait for 1h. Discard kombu and slice mushroom.
Step 2
If using, stir fry 豆干 until golden brown on medium high. Set aside.
Step 3
Fry impossible burger until golden. Set aside.
Step 4
Stir fry chili peppers, star anise, garlic, green onion on medium low til fragrant. Put in 雪菜 and mushroom slices and stir fry on medium high until most water gone and fragrant. Put in soy sauce, sesame oil and sugar and mix.
Step 5
Put dashi, season with chicken flavoring. simmer for 10min.
Step 6
Cook noodles in a separate pot. Drain and divide noodles into bowls.
Step 7
Put soup into bowls and enjoy~
