Ingredients
8 servings
2 cupsgrape tomatoes
cherry tomatoes or chopped tomatoes
1 cupmini mozzarella balls
⅓ cupfresh basil
chopped
12 ouncesfusilli pasta
⅓ cupolive oil
¼ cupbalsamic vinegar
1lemon juice
1 ½ tspsalt
1 tspblack pepper
fresh cracked
1 tspdried oregano
2 tspgarlic cloves
minced
Instructions
Step 1
Boil the pasta in salted water. Drain and rinse with cold water.
Step 2
Whisk together the olive oil, balsamic vinegar, lemon juice, salt, pepper, oregano, and garlic. Pour over the pasta. Add in the mozzarella cheese, tomatoes and basil and stir together until coated. Serve immediately.
