Instructions

Step 1
Make the Dressing: In a large bowl combine 1 medium minced shallot, 2 TBS lemon juice, 2 TBS balsamic vinegar, salt, pepper. Let sit for about 5 minutes, then add 1/3 c EVOO. Adjust the lemon juice, salt, and pepper to taste.
Step 2
Make your Pasta: Cook a short pasta according to package directions until just al dente. Drain well and then, while still warm, add to the bowl with the dressing. Toss to combine and let the pasta cool and soak up that delicious dressing. Pastas like rotini, fusilli, or bow ties work well for this dish.
Step 3
Prep the Rest: Halve 2 pints grape or cherry tomatoes. Rough chop or tear fresh basil. Once the pasta has cooled, add your tomatoes, basil, and mozzarella pearls. Season with garlic salt or Seasonello aromatic herbal salt, and pepper to taste.
Step 4
Serve: Top with a quick drizzle of olive oil and balsamic, a squeeze of lemon juice, and fresh grated or shaved parmesan. You can also serve over a bed of baby arugula or spinach.
