ORANGE TOFU & BROCCOLI (MEAL PREP)

This meal is inspired by Chinese Orange Chicken! We kept all the flavour but added our little touch to make it vegan and extra nourishing. It turned out so delicious and is sure to make a regular appearance on my meal prep rotation! It also has 29g of protein so it’s a great one to make if you’re trying to up your protein intake.

Instructions

Step 1
Bake the tofu in the air fryer at 350 degrees F (180 C) for 15 minutes (or 20 minutes at 400 F (200 C) in the oven).
Step 2
Bake the broccoli for 8 minutes at 350 degrees F (180 C)(15 minutes in the oven).
Step 3
Combine the orange juice, ginger, garlic, tamari, rice vinegar, sesame oil and maple syrup.
Step 4
Combine the tapioca starch and water.
Step 5
To a pan on medium heat, add the sauce and tapioca mixture. Cook until it starts to thicken.
Step 6
Stir in the tofu and broccoli.
Step 7
Serve with rice, spring onions and sesame seeds, and enjoy!
