Instructions

The Coleslaw

Step 1
Finely slice your onion and cabbage and grate the carrot
Step 2
Add your Mayo, cream, mustard, lemon juice, and salt and pepper to your liking and stir thoroughly to make the slaw

The Fish

Step 3
Preheat the oil to 180C
Step 4
Whisk the beer into the flower slowly until fully combined and no lumps
Step 5
Add the salt, baking powder, and MSG and combine
Step 6
If this is going to sit around before use, refrigerate as we want it to be cold

Slice the fish into 8 1 inch strips
Step 8
Dust flour on all sides of the fish
Step 9
Dip the fish into the batter, ensure all the sides are coated, then dip straight into the oil

After a minute of frying, lift the fish out and drizzle more batter onto both sides and re submerge into the oil and fry for a further 3-4 minutes til golden brown and crispy

Lay onto a draining rack for a minute to remove excess oil

The Sandwiches

Toast the buns for a couple minutes in a buttered pan on medium heat

Slice the pickles 3mm thick on a diagonal
Step 14
Add coleslaw to the bottom bun and garlic Mayo and pickles to the top bun

Repeat for the other 3 buns
Step 16
Add 2 fish fingers to each and the top bun and enjoy
