Instructions
Step 1
Bring split peas and water to a boil in a medium pot. Reduce heat, cover, and simmer for 45 minutes. Meanwhile, prep other ingredients.
Step 2
In a large pot over medium-high, heat the oil. Add onion, garlic, and carrot. Season with salt and pepper and sauté for 5 minutes.
Step 3
Add cooked split peas, stock, miso, and bay leaf. Cook for 15-20 minutes until veggies are tender.
Step 4
Remove from heat, season with salt and pepper to taste. Blend lightly with an immersion blender for a creamier texture.
