Ingredients
5 servings
1 boxTolerant Gluten Free Pasta

3Persian cucumbers

1 ½ cupscherry tomatoes

1 cupmixed olives
mediterranean herbed

3Artichoke hearts

4 cupsarugula
or spinach

3 TbspFeta
For the Dressing
Instructions
Step 1
Boil your pasta in salted water until cooked to your liking
Step 2
Chop your cucumbers into bite sized pieces
Step 3
Quarter your cherry tomatoes
Step 4
Chop your Artichokes
Step 5
Make your salad dressing by whisking ingredients together. I always change the portions based on what tastes best to me and if you dont like mustard, dont use it! I also didn't feel I needed to add herbs to my dressing as the olives I got had more than enough flavor

Drain pasta and rinse in cold water to allow it to cool
Step 7
Add your chopped cucumber, tomatoes, artichokes, and olives, toss with dressing
To Serve
Step 8
When making for yourself: Add arugula to a plate then top with pasta salad and mix together. Top with feta
Step 9
When making for group and eating at once: Add the arugula into the serving dish and toss all ingredients together
