Ingredients
4 servings
2 tspchili powder
1 tspcumin
1 tspgarlic powder
1 tspsmoked paprika
¼ tspsea salt
or to taste
¼ tspblack pepper
⅛ tspcayenne pepper
1 lbchicken breasts
cut into 1" chunks or strips
2bell peppers

1lime juice
3 Tbspoil
fresh cilantro
chopped, optional for serving

warm, flour, or corn
Instructions
Step 1
Preheat grill or oven (325)Cut eight 18”x12” squares of foil; lay on a flat surface. Divide into four piles where each foil packet has two pieces.
Step 2
Combine seasonings in sm. bowl; mix.
Step 3
Place chicken in middle of each piece of foil. Sprinkle with half of the seasoning; toss to combine. Cut vegetables into thin strips; divide evenly into each packet, arranging them around chicken.
Drizzle chicken & vegetables with olive oil & lime juice; sprinkle vegetables with remaining seasoning mix.
Step 4
Fold foil over chicken; seal to close off packets.
Grill
Step 5
Place foil packets onto grill; grill for 7-8 min. Flip over; grill (6-8 min. longer) (depending on the thickness of the chicken) until chicken is cooked through.
Step 6
Remove from the grill; carefully open the foil packets.
Step 7
Serve with warm tortillas with sliced avocado and your favorite toppings.
Oven
Step 8
Place foil packets on a baking sheet and cook (25-30 min. until chicken is cooked through (rotating tray once). (Time varies depending on the thickness of the chicken.) Remove baking sheet from oven.

Serve with warm tortillas with sliced avocado and your favorite toppings.
Tips

FOR LOW CARB: Serve in low carb tortillas, over salad or cauliflower rice.
Step 11
FOR MEAL PREP: Divide into lunch containers over rice and wrap tortillas separately.
(Cook Mexican rice or cilantro-lime rice either for dinner or just meal prep.)
