Chicken Fajita Foil Packets are the perfect easy meal for summer grilling and cookouts. Best of all, they're loaded with all your favorite Tex Mex flavors and make a low carb, paleo, and keto friendly meal.

Ingredients
4 servings
2 tspchili powder
1 tspcumin
1 tspgarlic powder
1 tspsmoked paprika
¼ tspsea salt
or to taste
¼ tspblack pepper
⅛ tspcayenne pepper
1 lbchicken breasts
cut into 1" chunks or strips
2bell peppers
med
1lime juice
3 Tbspoil
fresh cilantro
chopped, optional for serving
lime wedges
avocado
sliced
tortillas
warm, flour, or corn
Instructions
Step 1
Cut eight 18”x12” squares of foil; lay on a flat surface. Divide into four piles where each foil packet has two pieces.
Step 2
Combine the seasonings in small bowl and mix. Place the chicken in the middle of each piece of foil. Sprinkle with half of the seasoning and toss to combine.
Step 3
Cut the vegetables into thin strips and divide evenly into each packet, arranging them around the chicken.
Step 4
Drizzle the chicken and vegetables with olive oil, lime juice and sprinkle the vegetables with the remaining seasoning mix.
Step 5
Fold the foil over the chicken and seal to close off the packets.
Step 6
If Cooking on the Grill:
Preheat grill to med.-high
Step 7
Place foil packets onto grill and grill for 7-8 minutes, then flip over and grill for an additional 6-8 minutes (depending on the thickness of the chicken) or until chicken is cooked through.
Step 8
Remove from the grill and carefully open the foil packets.
Step 9
Serve with warm tortillas with sliced avocado and your favorite toppings.
Step 10
If Cooking in the Oven:
Preheat oven to 425°F
Step 11
Place foil packets on a baking sheet and cook for 25-30 minutes (or until chicken is cooked through, rotating tray once). Time varies depending on the thickness of the chicken. Remove baking sheet from oven.
Step 12
Serve with warm tortillas with sliced avocado and your favorite toppings.
Step 13
FOR LOW CARB: Serve in low carb tortillas, over salad or cauliflower rice.
Step 14
FOR MEAL PREP: Divide into lunch containers over cauliflower rice and wrap tortillas separately.
