20gcane sugar
10gfresh yeast
150gtype 00 flour

Instructions
Brioche buns
Step 1
Start by mixing the yeast, milk and sugar until almost fully dissolved. Add the flour, oil and salt and knead for 5 minutes until almost smooth. Work into a ball and place in a bowl for 2 hours to rise at room temperature. After the two hours shape into 4 balls and put on a baking tray with parchment paper, beat an egg and brush the buns, topping lastly with the sesame seeds. After 2 more hours of rising, preheat the oven to 180°C and once it gets to temperature cook for 20 minutes. Rest until cooled down

Mix mayo, mustard, pickle juice, pickles and onion powder, garlic powder and smoked paprika. Adjust to your liking
Caramelised onions
Step 3
Slice the onions and cook in a pan with olive oil and a fair amount of salt to get the moisture out. Cook for 20/30 minutes on medium low and deglaze with balsamic vinegar towards the end

Cook the patties in some butter, topped with salt and pepper. Flip once, add the cheese and cover with a metal bowl to allow the cheese to melt perfectly.
