medium, finely chopped
2 clovesgarlic
minced
1 Tbspworcestershire sauce
1 tspsmoked paprika
1 tspDijon mustard
1 tspKosher salt
½ tspblack pepper
freshly ground
4brioche burger buns
4 slicessmoked gouda cheese
4 Tbspmayonnaise
4 leaveslettuce
1tomato
large, sliced
2 Tbspvegetable oil
Instructions
Step 1
In a mixing bowl, combine the minced beef, chopped red onion, minced garlic, Worcestershire sauce, smoked paprika, Dijon mustard, kosher salt, and black pepper. Mix gently with your hands until all ingredients are evenly incorporated. Divide the mixture into 4 equal portions and shape each into a patty about 2 cm thick. Refrigerate for at least 30 minutes. (Ingredients: minced beef, red onion, garlic, Worcestershire sauce, smoked paprika, Dijon mustard, kosher salt, black pepper; Devices/Utensils: mixing bowl, clean hands)
Step 2
Light your charcoal using the chimney fire basket. Once the charcoal is white-hot, arrange the charcoal baskets on opposite sides of the Weber grill. Place the grill grate over the charcoal baskets, close the lid, and preheat the grill to medium-high heat (approximately 220°C) for 10 minutes. (Ingredients: none; Devices/Utensils: Weber original 57 cm, two charcoal baskets, chimney fire basket, hand held thermometer, tongs)
Step 3
Brush both sides of the beef patties with vegetable oil to prevent sticking. Place the patties on the grill grate, cover the grill, and cook for 4-5 minutes per side or until they reach an internal temperature of 60°C for medium-rare. In the last minute of cooking, top each patty with a slice of smoked gouda cheese and close the grill lid to allow the cheese to melt. (Ingredients: beef patties, vegetable oil; Devices/Utensils: Weber original 57 cm, hand held thermometer, tongs, brush)
Step 4
Lightly toast the brioche buns on the grill for 1 minute. Spread a tablespoon of mayonnaise on the bottom half of each bun, then layer with a lettuce leaf, a tomato slice, and a beef patty with melted cheese. Close each burger with the top half of the bun. (Ingredients: brioche buns, mayonnaise, lettuce, tomato; Devices/Utensils: knife, spatula)
