Ingredients
2 servings
4tomatoes
roughly chopped
1onion
roughly chopped
4garlic cloves
peeled
1 cupsundried tomatoes
not in oil
2 Tbspvegan stock powder
1 Tbspcoconut sugar
or maple syrup, can otherwise blend 2 dates in blender with the tomato puree
¼ tspdried italian herb
2 Tbspcapers
16kalamata olives
2 Tbspsambal oelek
less or omit for less heat
4 cupsbaby spinach leaves
140 gramswholemeal spaghetti

To serve
Instructions
Step 1
Place a pot of water on a high heat, once boiling, add the spaghetti.
Step 2
Heat a large frying pan on a high heat.
Step 3
Into a high powered blender, add the tomatoes, onion, garlic and sundried tomatoes, then blend to a puree. Pour the puree into the hot frying pan and stir.
Step 4
Add a splash of water into the blender and blitz, then add it to the puree and stir. If you need to add more water, use some of the cooking water from the pasta.
Step 5
Add the vegan stock powder and stir. Turn the heat down to low and let it simmer.
Step 6
Add the italian herbs, capers, olives and sambal oelek and stir. Add the spinach and stir through. Drain the spaghetti and add it to the pan, stir through.
Step 7
Serve in a bowl with nutritional yeast sprinkled over the top (if using).
