Ingredients
4 servings
1 Tbspbutter
or ghee
3 Tbspolive oil
divided
10 ozcremini mushrooms
sliced
8 ozshiitake mushrooms
stems discarded and caps sliced
Himalayan salt
or Sea salt
black pepper
1shallot
large, finely chopped
8chicken thighs
small
⅓ cupdry white wine
½ cupchicken bone broth
3 sprigsfresh thyme
¼ cupcream
goat's milk, cream cheese
Instructions
Step 1
Heat oven to 375 F. Heat butter and 2 Tbsp oil in large oven-safe skillet on medium-high. Once butter foams, add mushrooms and pinch of salt and cook, tossing occasionally, 5 mins.
Step 2
Add shallot and cook, tossing occasionally, until mushrooms are golden brown, 2-3 mins.; transfer to plate and wipe skillet clean.
Step 3
Return skillet to medium heat. Rub chicken with remaining Tbsp oil and season w/ salt and pepper. Add chicken to skillet, skin side down and cook until browned, 10-12 mins. Flip chicken over; add wine, broth, and thyme; and transfer skillet to oven until chicken is cooked through (165F), 5-6 mins.
Step 4
Transfer chicken to plate, discard thyme and return skillet to medium heat. Stir in cream and mushroom mixture and cook until heated through, about 2 mins. Serve with chicken and sprinkle with thyme if desired.
