Step 1
Peel carrots into long strips with a hand peeler Put them into pot of boiling water and boil for 5 min Mix all other ingredients in a large glass jar Remove carrots from stove and drain and rinse with cold water. Let dry for a few min and put carrots into jar with marinade. Leave for 4-24 hours and turn jar every so often to ensure marinade is mixed through. Enjoy
