Instructions

Step 1
Dice the potato and pepper, and measure out desired amount of spinach. Put these in a bowl for later. Chop the onion and mince the garlic.
Step 2
Put 1 tbsp olive oil in the pot and add onion and garlic. Push around for about one minute, then add the spices. Add a splash of the stock to avoid burning.
Step 3
Add vegetables, lentils, and bulgar
Step 4
Add vegetable broth. You might need to add more later on as the soup gets starchy
Step 5
Let it sit on medium high heat for a half hour
