Instructions

Step 1
Combine the chopped cucumber, cherry tomatoes, red onion and parsley in a large bowl.
Step 2
Sprinkle the salt and pepper over the veggies.
Step 3
Whisk together the olive oil, vinegar and garlic and pour over the salad. Mix well. Squeeze the lemon over top.
Step 4
Refrigerate 30 minutes before serving. Add more salt and pepper to taste, if desired.
