Ingredients

1 cupRaw Cucumber

1 cupRaw Peppers
Red
1 cupRaw Tomatoes
12olives
Olives, Kalamata, or sub for 1 1/2 oz avocado, ⠀
1 lbChicken
breast, boneless, skinless, raw
2 TbspParsley
1 cloveGarlic
clove ⠀
4 tspLemon Juice
or Lime
2 Treduced fat feta cheese
Instructions
Step 1
1. Preheat George Foreman grill or air fryer. ⠀
Step 2
2. Place chicken on grill when heated and cook about 5 minutes on each side, or until chicken is thoroughly cooked and no longer pink. Cut chicken into slices. ⠀
Step 3
3. In a serving bowl, combine parsley, olives, and garlic. Whisk in 4 tsp lemon juice. Add cucumber, bell pepper, and tomato. Toss to coat ingredients with dressing. Add up to 1 tsp more of lemon juice to taste. ⠀
Step 4
4. Split salad into two servings and place 6 oz chicken on top each salad.⠀6 olives per serving
