Instructions

Step 1
Heat oven 350 degrees. Prepare zucchini noodles and boats as seen in this video.

Step 2
Sauté onions, peppers, and zucchini for 3-4 mins. Add shredded chicken. Add garlic salt and chili powder, you could even use taco seasoning at this step. Lastly add the diced tomatoes and jalapeño and let cook for 3-4 mins.
Step 3
Prep enchilada roll ups and/or boats in a casserole dish. Cover with enchilada sauce. You may choose to prep some in tortilla wraps for your family. Look for gluten free wraps if you plan to eat them. Place in a casserole dish and cover with enchilada sauce and cheese.
Step 4
Bake for 20-30 minutes.
