Shredded beef tacos

#TacoTuesday these shredded beef tacos are a hit every time I make them. The meat is so tender and juicy. I made them in the oven this time, you can make them in a pressure cooker for 1 hour on high pressure or a slow cooker for 4 hours on high and 8 hours on low.

Instructions

Step 1
1. Put a pan or Dutch oven on high heat add oil and sear the beef on all sides. Once all the beef is seared remove from pan and continue until all the beef is seared.

2. To that same pan add in the diced onion and garlic sauté for a couple of minutes.

3. Next add in the one can of diced tomatoes with green chili and chipotle peppers with adobo sauce (vou can add in half or whole can of chipotle peppers depending on how spicy you like it) Crush the chipotle peppers with your hand or a spoon.

4. Next season with the spices cumin, oregano, salt, Sazón and black pepper, give it a good mix. Add the meat back into the pot, pour the beef broth over the meat, put 2 bay leaves on top.

5. Wet a piece of parchment paper, squeeze out the water then place it on top of the meat then cover with the lid.
Step 6
6. Put it in a preheated 325° oven and bake for 3 and 1/2 hours. Once it comes out of the oven squeeze the juice of one lime on to and start shredding the beef.
Step 7
7. Serve on flour or corn tortillas with your favorite taco toppings and enjoy.
