Greek Chicken Burgers with Tzatziki Sauce

Ingredients
4 servings
1cucumber
medium
1 tablespooncornstarch
1 tablespoonfresh oregano leaves
chopped
2cloves garlic
finely chopped
¼ teaspoonsalt
½ cupfat-free plain greek yogurt
2 tablespoonsonion
chopped
2 teaspoonsfresh mint leaves
chopped
1 lbground chicken breast
1 cupfresh spinach leaves
chopped
¼ cuppitted kalamata olives
chopped
¼ teaspoonpepper
2whole-wheat pita breads
pocket, 6 inch, cut in half to form pockets
1 cuptomato
chopped
4 tablespoonsfeta
crumbled
Instructions
Step 1
Set oven control to broil.
Step 2
Cut 12 slices from cucumber; set aside.
Step 3
Chop enough remaining cucumber to equal 1/2 cup: place in small bowl.
Step 4
Stir in yogurt, onion and mint.
Step 5
Refrigerate until serving time.
Step 6
In large bowl, mix chicken, spinach, olives, cornstarch, oregano, garlic, salt and pepper.
Step 7
Shape mixture into 4 oval patties, 1/2 inch thick.
Step 8
Place patties on broiler pan.
Step 9
Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of patties reads 165°F.
Step 10
Place 1 burger in each pita half.
Step 11
Add tomato and 3 reserved cucumber slices to each pita half.
Step 12
Serve with tzatziki sauce and crumbled feta.
