Instructions

Step 1
Slice the onion, fennel and leek and sauté in olive oil in a saucepan over low heat until soft.
Step 2
Peel and cut the root vegetables into bite size chunks. Add enough water to just cover. Add the thyme, stock cube and plenty of pepper. Bring to the boil, then simmer for 30 minutes.
