Instructions
Step 1
Prepare the ingredients Grate the zest of your lemons before cutting the lemons in half and juicing them. Peel your shallot and fine dice jt. Remove the stalks from your mint and rough chop the leaves
Step 2
Add water to a wide based pot but not to much as you wantthe pasta waterto be starchy ! Bring to the boil then lower to a simmer and add a generous pinch of rock salt then cook your pasta (if using dry pasta cook until al dente)
Step 3
Add extra virgin olive oil to a high sided pan warm up on a medium heat then add the shallot ,1/3 of your lemon zest and the lemon carcass and simmer for a few minutes then add half the lemon juice and a handful of chopped mint leaves
Step 4
After a couple of minutes add the pasta and 1-2 ladles of the pasta water to the pan and stir for about a minute then take out the lemon carcass and add some more of the chopped mint and another 1/3 of the lemon zest
Step 5
Add the rest of your lemon juice and stir for about 1 minute then take the pan off the heat and add your gratitude cheese and toss until nice and creamy
Step 6
Plate up your pasta and drizzle with some of the lemon due that is left in the pan and garnish with more chopped mint and the last of your lemon zest
