Instructions
Step 1
In a medium frying pan, melt the butter and oil and then add the garlic and the mushrooms. Fry for 5 minutes until golden brown. Be aware not to overcrowd the pan as the mushrooms won't brown.
Step 2
Add the cannellini beans, gravy mixture, double cream and fresh thyme and gently warm for 2-3 minutes.
Step 3
To serve, top the lightly toasted sourdough with the mushrooms and bean mixture. Garnish with a little more fresh thyme and serve immediately.
