Instructions

Step 1
Sauté all the veggies (not potatoes) and garlic all together with the vegan butter. Add spices. Once the veg has soaked up some flavor (about ten minutes), put everything in the blender with a cup of broth. Should be the consistency of hummus. Once it is blended to your liking, put it back into your soup pot and add the remaining broth. Then add the chopped (bite size) russet potatoes. Cover and let cook on medium heat for about twenty minutes (or until Potatoes are soft) stirring occasionally.
