Easy Homemade Gnocchi

Instructions

Step 1
Boil the potatoes with the skin. Then peel and mash the warm potatoes and let them cool.
Step 2
Add the remaining ingredients, mix to combine and let the dough rest for a few minutes.
Step 3
Divide the dough into 3 pieces, roll each piece into a long sausage and cut it into small pieces. Optionally roll over a fork for the typical pattern. Dust with semolina and store in the fridge for up to 1 week.
Step 4
For the pesto mix all ingredients in a mortar or blender.
Step 5
To cook the gnocchi, add some salt and starch to a pot of boiling water and simmer the gnocchi for 2 minutes.
Step 6
Add the pesto to a pan with some of the cooking water then add the gnocchi directly to the pan and cook for 1 more minute to combine.
