Bulgarian Salad (Shopska salata)

Delicious refreshing salad that can be made ahead and kept for up to a week in the refrigerator. We discovered this treasure of health and deliciousness in our travels to Bulgaria. Less feta can be used, but don't underestimate how much it impacts the incredible flavor of this salad.

Instructions

Step 1
Dice the vegetables and put them in a large bowl (cut the cucumbers in half lengthwise and seed them first).
Step 2
In a small jar or drink bottle with a lid, mix the oil, vinegar, salt and pepper. Shake well for 15 seconds until thick and combined. Pour over veggies and mix in.
Step 3
Crumble the feta and mix in the salad before putting in the fridge, or put on top each time before serving.
