Makes: ~50 Eggrolls
EGGROLL FILLING
2 lb ground meat of choice- I used ground turkey
1/4 of a cabbage, shredded
1 large carrot, shredded
50g bean thread noodles (more or less depending on preference)
50g wood ear mushrooms (more or less depending on preference$
1 small onion, finely chopped
2 eggs
2 tsp black pepper
2 tsp salt
3 tsp sugar
- mix this together
EGGROLL PASTE/ SEAL
1/4 cup water
1 TBS all purpose flour
- mix this together
ADDITIONAL INGREDIENTS
Egg roll wrapper
Oil for deep frying (I used corn oil)
INSTRUCTIONS
1. Soak bean thread noodles and dehydrated wood ear mushroom in hot water for 30 mins. Drain and roughly cut with kitchen scissors.
2. Now, mix all of your ingredients under “Eggroll Filling” including the bean thread noodle and wood ear mushrooms from step 1
3. Mix you’re “PASTE” and set aside
4. When you are ready, spoon in 1 TBSP of filling into your wrapper and roll your egg roll as shown in the video
5. When you are ready to cook, heat up a pot with just enough oil to deep fry (med heat). Deep fry for 6-7 mins. Remove & place her onto a paper towel to catch any excess oil.
