Instructions
Step 1
In bowl, add butter & brown sugar; stir to combine. After each of the following additions, mix to fully incorporate: 1) egg, 2) peanut butter & vanilla. 3) flour, salt, & baking soda. Gently fold in peanut butter cups.
Step 2
Chill dough (1 hr.)
Preheat oven to 350°F
Step 3
Scoop out sold dough to make 2” ball; place on parchment paper-lined baking sheet, leaving about 2” inbetween.
Step 4
Bake (8-10 min.) until bottom edges of cookies are golden.
Step 5
Cool.
Step 6
Store in airtight container (up to 5 days.)
