Creamy Chive Chicken with Lemon Rice & Dijon Apple Salad

I don't remember where I came across this receipt, but it's one of my families favorites! Chicken topped with a creamy Dijon sauce with lemony rice and a salad with crisp apples and Dijon vinaigrette.

Step 1
Zest and quarter lemons.

Mince chives

Halve and core apples. Cut into triangles.

Add rice and 3 cups of water to a pot. Add a pinch of salt. Bring to a boil, cover and reduce heat to low. Cook for 15-18 minutes. Remove from heat and keep covered until you are ready to serve.
Step 5
While rice cooks, combine 2 T of olive oil, 2 T of Dijon mustard, juice from 1 lemon, 1 tsp of sugar and chives. Salt and pepper to taste and set aside.
Step 6
In a large pan heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through.
Step 7
Heat the same pan over medium high heat. Add chicken stock concentrate*, remaining Dijon mustard, 1/2 cup of water and a squeeze of lemon juice. Simmer until slightly thickened. Turn off heat. Add sour cream and remaining chives and stir. You can add additional water if the sauce seems too thick. *Determine the amount of concentrate based on your packages directions - ie. 1 T to 1 cup water = in this recipe it would be 1/2 T)
Step 8
Fluff rice with fork, add butter, lemon zest and salt and pepper.
Step 9
Add spring mix and apples to a bowl. Top with the Dijon vinaigrette and toss.
