Instructions
Step 1
Cut a small ‘x’ at the bottom of tomato.
Step 2
Cook tomato in boiling water for 30 seconds before removing and dunking into cold water bath.
Step 3
Peel off skin of tomato
Step 4
Cook pasta in a pot of generously salted water.
Step 5
Remove prawn heads and set aside.
Step 6
Devein prawns.
Step 7
Fry prawn heads in a pan of oil.
Step 8
Drain oil into bowl and set aside.
Step 9
Pour some of the prawn oil into the pan and sauté minced garlic.
Step 10
Add prawns into pan and cook for a few minutes.
Step 11
Once the prawns are fully cooked, remove prawns from pan and add chopped onions.
Step 12
Add tomato into the pan and stir fry.
Step 13
Add cherry tomatoes.
Step 14
Season with salt.
Step 15
Add cooked pasta and some pasta water into the pan.
Step 16
Season with red pepper chilli flakes and chopped parsley.
Step 17
Stir and mix well.
Step 18
Assemble pasta and prawns onto a prawn and finish off with a few drizzles of the prawn oil.
