Arancini “zero waste rice”

This is my twist on a typical Italian recipe from south Italy called “arancini”. I always find myself with some left over white rice or risotto and this is a super tasty way to make use of it and not waste anything!

Step 1
- In a pan stir fry the onion ,carrot (finely chopped) with olive oil , add the rice, vegetables broth salt and pepper
Step 2
- The mix should be nice and sticky
Step 3
- Let the rice cool down while preparing the ragù.
Step 4
- In a pan heat some olive oil and slowly cook the onions,garlic until golden, remove it before adding other ingredients.
Step 5
- In a bowl mix the minced soy or minced meat with some broth and add it to the pan with tomato sauce and peas .
Step 6
- Roll the arancini as big as you like , we prefer them medium size so they are big enough to fit some vegan cheese and have a lovely melting cheese heart when ready.
Step 7
- Roll them in breadcrumbs and fry until golden .
Step 8
- Serve hot with some tomato sauce 🙌
