Home grown chillies from my mums garden, I had to make a chilli oil.
Note: You can use a food processor and a small saucepan for this, I just used the Thermo because it chops and cooks and i literally bought this machine for this exact reason! To make jarred products 🙌

Step 1
Most important: MUST USE GLOVES!
Step 2
Wash and removed stems for chillies. Transfer to a food processor. Add garlic and salt and process. Scrape down sides and process again until everything is evenly chopped.
Step 3
In thermo (or saucepan add chilli mix) add the initial 200ml oil. Simmer on a medium heat for 20 mins. Reverse 1 stirring mode. In a saucepan stirring often.
Step 4
Add sugar and dried chilli powder and further simmer for 5 mins.
Step 5
Turn off heat and add sugar, sesame oil and soy. Mix well and then pour into jars. Top up the oil in the jar so you have a good balance of oil and chillies.
Step 6
Note: Use only a light flavoured and high smoke point. You can make this with avocado oil if you like.
