Instructions

Step 1
Heat oil in a saute pan. Add the onions, toss in oil and cook until richly golden.
Step 2
Bring the water to a boil, add the lentils and cook for 20 minutes. Add half the fried onions and the rice. Season with salt and pepper, stir well. Cover and cook on a very low heat for about 20 minutes or until both lentils and rice are cooked. Taste and correct seasoning if necessary.
Step 3
Meanwhile continue to cook the remaining onions in the saute pan until crisp and caramelised.
Step 4
Serve all at room temperature decorated with the crispy onions.
