Instructions
Step 1
Add all ingredients except chicken, salt, and pepper to food processor or blender and process until smooth.
Step 2
Season cubed chicken with salt and pepper, then stir fry in pan until 50% cooked
Step 3
Season cubed eggplant with salt and pepper, then add to pan with chicken and stir fry until cooked
Step 4
Cook rice according to instructions
Step 5
In a bowl lay a bed of rice, top with chicken and eggplant, and smother with tikka masala sauce to serve
