Ingredients

For the dough
480mlolive oil
50mlcognac
100mlorange juice
1 tspbaking soda
200 grsugar
1 tspclove
2 tspcinnamon
orange zest
two oranges
800 grall purpose flour
2 tspbaking powder

Instructions
Step 1
Mix four with baking powder after screening them carefully.
Step 2
In a separate bowl, start whisking the olive oil with the sugar and gradually add the remaining ingredients (except for the juice and the baking soda).
Step 3
Be careful to add the orange juice after you’ve mixed it with the baking soda and it’s started bubbling.
Step 4
Finally, add the flour mix to the liquids and continue whisking by hand, using a spatula.
Step 5
The dough should be a tad wet and easily kneaded. Make small doses of about 5 cm in diameter. Make sure to make small holes using a fork.
Step 6
Bake for 25 minutes and let them cool for about an hour.
Step 7
In a pot, pour water, honey, sugar, and the lemon and start mixing until it starts to boil (6/9 temperature). Once the mix has a brownish colour, lower the heat to about 2/9 and let the melomakarona sit for 20 seconds per side.
Step 8
Sprinkle with ground walnut or pistachio.
