The perfect base red sauce! With very slight tweaks this sauce transforms into a pizza sauce, a bolognese or vodka sauce.

Ingredients
6 servings
4 Tbspolive oil
1yellow onion
Large, chopped
3 clovesGarlic
2 CansCrushed Tomatoes
1can tomato sauce
unseasoned
3 sprigsfresh basil
parmesan cheese
salt
to taste
pepper
to taste
for vodka sauce
Instructions
Step 1
Warm a large pot, over medium heat and add enough olive oil to cover the bottom of the pot
Step 2
Once you see the oil start to gently ripple add your chopped onion and cook until soft and glassy
Step 3
Add 3-4 cloves of chopped garlic and stir 1-2 minutes more until fragrant
Step 4
Add all cans of tomato and bring to a gentle simmer over low heat.
Step 5
Taste and adjust to your preference adding fresh basil, salt, pepper and parmesan to taste and let simmer for another 10-20 minutes.
To make Vodka Sauce
Step 6
After the sauce has a chance to simmer 10minutes, stir in 1/2 cup of heavy cream and 1/4 cup vodka and bring back to boil.
Step 7
Simmer another 10 minutes, there should be no taste of raw alcohol when finished.
