This colorful Asian-inspired salad is layered with edamame, bell peppers, carrots, snow peas, cabbage and lettuce and a simple sesame-soy vinaigrette. One jar is a huge serving, perfect for lunch or it can serve two as a side dish.

Ingredients
4 servings
1 ½ cupsshelled edamame
1red bell pepper
medium, thinly sliced then cut into 1-inch pieces
1yellow bell pepper
medium, thinly sliced then cut into 1-inch pieces
1 cupsnow peas
thinly sliced
1 cupshredded carrots
4scallions
chopped
4 cupspurple cabbage
shredded
4 cupsRomaine lettuce
chopped
2 tablespoonssoy sauce
or Gluten-free Tamari
2 tablespoonslemon juice
2 teaspoonshoney
1 teaspoongrated ginger
1garlic clove
crushed
2 ½ tablespoonscanola oil
light olive or grapeseed
½ tablespoonsesame oil
1 teaspoonsesame seeds
Instructions
Step 1
In a small mason jar combine the dressing ingredients and shake well.
Step 2
Place 2 tablespoons of the dressing on the bottom of 4 large quart sized mason jars.
Step 3
Divide the edamame and place over the dressing.
Step 4
Then the peppers, carrots, snow peas, scallions, cabbage and lettuce and cover.
Step 5
Refrigerate until ready to eat.
Step 6
Just before eating, shake well to toss then pour onto a plate.
