California Rolls with Mango and Spicy Mayo

Ingredients
4 servings
1 ⅓ cupsblack rice
rinsed
2 ⅔ cupwater
2 tablespoonsrice vinegar
1 tablespoonsugar
¾ teaspoonkosher salt
4 sheetsnori
4 teaspoonssesame seeds
1English cucumber
sliced lengthwise into eight pieces
0.5mango
ripe, sliced lengthwise into eight pieces
0.75avocado
medium ripe, sliced
1 cuplump crab meat
drained
⅓ cupsriracha
or wasabi mayonnaise
Instructions
Step 1
1. To prepare rice: combine rice and water in a medium saucepan. Bring to a boil. Reduce heat to maintain a simmer, cover and cook until the water is absorbed and the rice is tender, 30 to 35 minutes. Remove from heat and let stand covered for 10 minutes
Step 2
2. Combine vinegar, sugar and salt in a small microwave clear bowl. Microwave on high until the sugar and salt dissolve, about 30 seconds
Step 3
3. Add the mixture to the rice and fluff with a fork. Spread the mixture evenly on a baking sheet and let stand until cool enough to handle

4. Assemble rolls

5. Cut rolls into eight pieces and serve drizzled with mayonnaise
