Instructions
Step 1
Cut your butternut squash into cubes.
Step 2
In a pan over medium low heat, drizzle 3 tbsps olive oil, garlic clove, fresh rosemary and sizzle for a couple of minutes.
Step 3
Add butternut squash, a drop of boiling water, cover with a lid and cook for about 15-20 mins or until soften. Stir occasionally and add more water if necessary.
Step 4
In the meantime, blend your squash until creamy and boil your pasta (take it out 3 mins before its cooking time).
Step 5
Mix your pasta with your squash cream and set aside.
Step 6
Remove skin from your sausage. In a pan over medium low heat, brown your sausage for about 4/5 mins with a drizzle of olive.
Step 7
Break your sausage into tiny pieces.
Step 8
Layer your pasta in an oven dish with smoked provolone cheese, grated Parmigiano and your sausage.
Step 9
Bake in the oven for 15 mins or until al the cheese is melted and the top start becoming crunchy. (200C/390F).
