Step 1
Grate carrots like matchstick
Step 2
Heat kadai add 2 tbsp ghee, add cashews and raisins to roast.

Add carrot and sauté for 2-3 minutes so the carrots absorb the ghee
Step 4
Add milk to the carrots and cook the carrots in milk for 5-7 mins
Step 5
Pour the water and cook for further 10-12 minutes on medium flame , allow the carrot to cook
Step 6
Add elaichi powder and sugar. The sugar starts melting so the mixture becomes more watery.
Step 7
Cook this for another 10-12 minutes on medium flame. Meanwhile after 5 mins add khoya and cook the mixture
Step 8
Add the remaining ghee slowly once the halwa starts to dry and thicken up. Add 4 drops of lemon juice and switch off
Step 9
Once it cools down the halwa is ready
