Step 1
In a mini cast iron- cook down tomatoes, bell pepper, onion and garlic in butter until soft and translucent.
Step 2
Add in seasonings, lemon juice, sriracha and water, reduce to a simmer.
Step 3
Crack in an egg and cover till cooked.
Step 4
Top with feta cheese, parsley, & scallions.
Step 5
Serve with air fried potatoes or dip with bread. enjoy!
