Instructions
Step 1
Add pan with residue on medium heat
Step 2
Half cup of shallots
Step 3
Deglaze with wine of choice (bourbon for pork chops) to best suit your meat and equal part stock
Step 4
Scrape pan and bring to a simmer for 5-7 minutes
Step 5
Squeeze lemon to taste
Step 6
Stir until slightly thickened or leaves a trail when stirring
Step 7
Add about 3 tablespoons cold butter or to your liking and whisk till melted (if too oily add some water and it should reduce to oil)
Step 8
Add herbs and stir till glossy
Step 9
Add salt and pepper to taste
