Creamy Pacheri Carbonara with Grana Padano

Instructions

Step 1
Bring a large pot of salted water to a boil. Add the Pacheri pasta and cook until al dente, about 10-12 minutes.
Step 2
While the pasta is cooking, heat a large skillet over medium heat. Add the diced guanciale or pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
Step 3
In a large mixing bowl, whisk together the egg yolks and grated Grana Padano cheese until well combined.
Step 4
Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the guanciale or pancetta.
Step 5
Toss the pasta and guanciale or pancetta together, then remove from heat.
Step 6
Slowly pour the egg and cheese mixture over the pasta, stirring constantly to avoid scrambling the eggs.
Step 7
Add the reserved pasta water a little at a time to create a smooth, creamy sauce.
Step 8
Season with salt and freshly ground black pepper to taste.
Step 9
Serve hot with additional grated Grana Padano on top.
