Instructions
Step 1
Add salt to a pot of water, and bring to a rolling boil.
Step 2
Add Linguine, and cook for 10 minutes, until al dente.
Step 3
While Linguine is cooking, whisk egg yolks, egg, cheeses, butter, and pepper. Set aside.
Step 4
Add diced Guanciale to a cold pan, and place over low heat. You want to render as much fat.
Step 5
After Guanciale is fully cooked and crispy, remove from heat, and add drippings to the egg/cheese mixture. Stir well.
Step 6
Add 2 to 3 ladles of boiling pasta water to temp the egg/cheese mixture, making a rich & creamy sauce. Stir well, to not make scrambled egg. Add more water to reach desired consistency.
Step 7
Stir sauce into pasta, incorporate and emulsify well. Mix in the diced Guanciale. Serve.
