Step 1
Dice garlic and slice scallion.
Step 2
Wash mussels under cool running water. Scrub the outside and debeard the mussels if present, pull fibrous beard towards the hinge of the shell to remove and discard.
Step 3
In a large shallow stockpot, heat olive oil over medium-high heat. Further put in diced garlic to mix for a few seconds and add cleaned mussels. Then further add unsalted butter to melt, sweet wine/white wine, coconut milk, parsley, salt and scallion. Stir to combine.
Step 4
Cover and steam until mussels are opened up and cooked, which takes between 3 to 8 minutes.
Step 5
Garnish with chopped scallion and add in toasted garlic bread to serve.
