Ingredients
10 servings
2 kgsmussels
fresh rinsed, discarded any opened mussel
4 tablespoonsbutter
6 clovesgarlic
minced
25 gramsginger
minced or thinly sliced, Julienne
1 cupgreen apple
chopped into cubes
1red chili pepper
medium size, finely chopped
1 cupwhite wine
1 teaspoonsalt
1 teaspoonground black pepper
1lemon
Zest of
1 cuplemon Juice
½ cupfresh parsley leaves
chopped
2 tablespoonsolive oil
Instructions
Step 1
Preheat a wide sauce pan with lid over high heat then add the butter, chili and garlic and sauté until soften a little.
Step 2
Add the chopped ginger, chopped apple and onion and sauté fir 2 minutes.
Step 3
Then add in the wine and simmer until reduced by two thirds.
Step 4
Toss the mussels with the garlic butter and then add the wine, stir it for a minute and close the lid.
Step 5
Add the mussels to the saucepan over medium low and let the mussels cook for 10-15 minutes until you notice all mussels have opened up, then over low heat, steam the Mussels until cooked – about 2 - 3 minutes
Step 6
Uncover the pot and let some of the liquid evaporate over high heat.
Step 7
Remove from heat – add the lemon juice, olive oil, season to taste with Salt and Black Pepper – stir through the Lemon Juice, finely grated Zest and Parsley
Step 8
Toss the mussels one more time and serve it with French Baguette or toasted bread.
