Step 1
If you're making this with pasta, heat a large pot of water and cook the pasta according to package directions.

Cold water should be used to rinse and scrub the mussels.
Step 3
Remove and discard beards strings that hang from mussel shells with your fingers or a paring knife.
Step 4
Discard any mussels that have broken.
Step 5
Discard any mussels that are open and refuse to close.
Step 6
In a large stockpot set over medium heat, add the oil and melt the butter. Once it's hot, add shallots, garlic, and salt.
Step 7
Add the wine and bring to a boil.
Step 8
Add mussels and cover.
Step 9
Steam for 5 minutes, or until all mussels are open.
Step 10
Add the herbs and mix well.
Step 11
Remove the pan from the heat.
Step 12
In four bowls, divide the mussels and broth.
Step 13
Serve with a lemon wedge
