Mussels in Tomato Garlic Butter Sauce

Been meaning to cook mussels, but could not find anywhere that sold farmed fresh live mussels. For the recipe, i coincidentally saw the frozen precooked mussels and they had a tomato garlic butter one that was remade you just had to put it in a pot or something. Gave me a great idea to try it myself and came up with this.

Ingredients
2 servings
1 lbfresh black mussels
2 Tbspsalted butter
1 tspolive oil
8cloves garlic
minced
0.25onion
chopped
10 ozcherry tomatoes
halved
0.5 ozbasil
chopped
2 tspfresh lemon juice
1 tspsalt
1 tspblack pepper

Instructions
Step 1
1. Clean mussels and let sit in filtered water.
Step 2
2. Prepare garlic, onions, cherry tomatoes, basil, lemon juice and set aside
Step 3
3. In a pan on medium heat, add butter, adjust heat to prevent burning.
Step 4
4. Add oil and let butter oil mixture come to temperature
Step 5
5. Sauté garlic and onions until they become translucent and fragrant
Step 6
6. Add in cherry tomatoes, up the temperature and allow to blister and soften, approximately 4-6 minutes
Step 7
7. Once tomatoes are softened, gently crush.
Step 8
8. Add basil, lemon juice, salt and pepper, incorporate and let the sauce reduce down, approximately 2-3 minutes
Step 9
9. Add in the mussels mix well and cover and steam for 6-8 minutes.
Step 10
10. Once ready toss everything and plate
